Tortillas are a central component of nutrition in Guatemala.
Today
In every meal, hot tortillas are served alongside grilled meats or used for dipping into stews, or simply as an accompaniment to beans, among other uses.
Tortillas are much more than just a food in Guatemala. Corn is the basis of both diet and Maya culture.
In Maya creation stories, it is believed that man was formed from corn.
The myth states that when the gods decided to create man, they experimented with various materials like wood and clay; however, corn proved to be the perfect material to shape man.
About Delicious Corn
Corn was domesticated over 10,000 years ago and is now the third most popular crop in the world, supplying 20% of the world's calories.
Corn is one of the few plants that is not self-replanting and requires humans to cultivate it.
The Maya also understood that corn must be cooked with lime (food-grade calcium hydroxide) to enhance its nutritional value and to make it easier to digest.
Guatemalan corn tortillas are not only wonderfully delicious and soft (unlike thin Mexican tortillas), but often are the only food source for many rural families.
It is hard to imagine Guatemala without the essential tortilla.
