Banana fritters are a Guatemalan dessert made with ripe bananas, flour, and spices. They are considered a specialty of Livingston, Izabal, but are popular throughout the country, usually served with a cup of coffee.
The banana (or plantain) fritters are made with ripe bananas (those with yellow or brown skin) and flour, then fried until they have a golden exterior and a fluffy inside.
In some regions, they are also known as "guineo" fritters and are the best way to use very ripe bananas or those that are about to spoil.
As a fun fact, in the city of Antigua, the Banana Fritters Fair is celebrated every year, featuring contests to select the best fritters. It is said that they were Miguel Ángel Asturias's (Nobel Prize in Literature 1967) favorite dessert, mentioned in his novel "Hombres de Maíz".

2 Eggs
1 cup of Wheat flour
Margarine or butter
Sugar for decoration

Preparation
Step 1 : To prepare the recipe, start by mashing the bananas in a large bowl until you get a smooth mixture.
Step 2 : Then, add the two eggs and mix everything together.
Step 3 : Next, add the flour and knead until you achieve a uniform consistency.
Step 4 : Afterward, place the margarine in a skillet over heat and pour a spoonful of the mixture.
Step 5 : Cook for two minutes on each side.
Step 6 : Finally, sprinkle with sugar, and if desired, add cheese.
