Carnitas Taco
Ingredients
1 kilogram of Pork lard
1 kilogram of Pork meat (tail)
2 teaspoons of Salt
½ teaspoon of Pepper (ground black)
1 cup of Chile arbol sauce
Preparation
Step 1 : Melt the lard in a large deep pan over medium heat.
Step 2 : Add chopped pork tail, salt, and pepper, and sauté until the pork pieces soften.
Step 3 : Cook over low heat for about 1 hour, being careful not to make the meat crispy. Remove the pork pieces and let cool aside.
Step 4 : Shred the meat with a fork. Remove any remaining fat residue. Put the meat in a medium saucepan and add the chile arbol sauce.
Step 5 : Cook over medium heat, stirring occasionally.
Step 6 : Serve the carnitas with a toasted corn tortilla.
