Ingredients

Chilaquilas of Guisquil

2 Large Guisquiles

Fresh cheese

3 Eggs

4 tablespoons of Olive oil

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The guisquiles should be washed and the shell removed.

Step 2 : Cut into medium-thick slices and cook in salted water for about 35 minutes, until tender.

Step 3 : Then remove from heat and let cool.

Step 4 : The cheese is sliced thinner than the guisquil slices.

Step 5 : Take the guisquil slices and place a slice of cheese in the middle of each.

Step 6 : In a separate bowl, beat the egg whites, gradually add the yolks, and let rest.

Step 7 : Preheat a skillet with olive oil, take the guisquil slices with cheese, coat both sides with the egg mixture, and fry in the oil.

Step 8 : Serve with a tomato sauce and cheese, if desired.
