Chiles rellenos
Ingredients
1 pound of Ground beef
4 Bell peppers
5 Chorizo sausages
5 Longaniza sausages
1 Carrot
1 White onion
4 Garlic cloves
3 Plum tomatoes
2 Jalapeños
2 tablespoons of Tomato paste
Fresh rosemary
Oregano
Basil
Paprika, to taste
½ pound of Mozzarella cheese
2 tablespoons of Butter
½ cup of Cooking cream
Preparation
Step 1 : To start, finely chop the vegetables for the stuffing and remove the membrane from the chorizo and longaniza sausages.
Step 2 : In a large skillet, add the tomato paste and butter, then sauté the vegetables in them.
Step 3 : Next, add the chopped meat and sausages and let them sauté.
Step 4 : Add the aromatic herbs and season the mixture, then add one-third of the mozzarella cheese and let it melt.
Step 5 : Carefully remove the tops of the bell peppers and wrap them in aluminum foil with the shiny side inwards.
Step 6 : Season with a touch of basil and oil, and brown them in a skillet on all sides.
Step 7 : For the sauce, melt the remaining cheese in a skillet and gradually add the cream, mixing until fully incorporated.
Step 8 : It is important not to overheat the sauce to prevent it from curdling.
Step 9 : Once the bell peppers are removed from the aluminum foil, fill them on the plate, cover with the sauce, and serve hot.
