Chuchitos are one of the typical recipes from Guatemala, recognized internationally. They are made with corn dough and a filling of chicken, pork, or cheese. A sweet variant of this delicious dish is the tamalito de cambray.

Chuchitos
Ingredients
1 kilogram of Dough
1 kilogram of Chicken
2 Sticks of butter
3 tablespoons of Oil
15 Tomatoes
4 Small green tomatoes
2 Red bell peppers
1 Medium onion
3 Cloves of garlic
1 Hot chile pepper (guaque)
1 Hot chile pepper (sambo)
Salt and broth
½ kilogram of Dry corn husks
Preparation
Step 1 : To begin, prepare the chuchitos dough by mixing the masa harina with water until you get a watery but firm consistency.
Step 2 : Then, add the oil, butter, salt, and broth to taste.
Step 3 : Next, for the sauce, roast the hot chile peppers and once roasted, soak them in water for about 20 minutes to reduce their spiciness.
Step 4 : After removing the water, blend them with a little water and strain.
Step 5 : In another pot, roast the tomatoes, small green tomatoes, garlic, onion, and bell peppers.
Step 6 : Blend to get the sauce and mix with the hot chile pepper preparation.
Step 7 : Pour everything into a pot and bring to a boil.
Step 8 : Meanwhile, cut the chicken into small pieces and cook it seasoning with salt and broth to taste.
Step 9 : Soak the corn husks in hot water and proceed to assemble the chuchitos.
Step 10 : Place a tablespoon of dough in the center of the husk, add the sauce on top, and insert a piece of chicken in the center.
Step 11 : Then fold the husk towards the center and up, tying it with a strip of husk.
