Drunken Beans
Ingredients
½ kilogram of Dry pinto beans
2 Coarsely chopped whole tomatoes
½ White onion in slices
1 Pickled jalapeño, thinly sliced
2 Garlic cloves
2 Fresh bay leaves
1 tablespoon of Dried oregano
350 grams of Dark beer
2 liters of Water
Salt and freshly ground black pepper
Preparation
Step 1 : The beans should be washed in cold water to remove loose stones or impurities.
Step 2 : Then, they should be placed in a large but not too deep pot and covered with water, ensuring the water exceeds the beans by 5 cm.
Step 3 : Cooking should last 30 minutes, after which the tomatoes, onions, jalapeño, garlic, bay leaves, oregano, and beer are added.
Step 4 : Continue cooking until the beans are tender, approximately 30 more minutes.
Step 5 : Once ready, the beans should be mashed with a processor and then seasoned to taste with salt and pepper before serving.
