Green Beans in Egg
Ingredients
3 Eggs
½ teaspoon of Cream of tartar
1 Cooked green bean
¼ cup of Vegetable oil
1 Chopped onion
Tomato sauce
1 pinch of Salt
Preparation
Step 1 : The eggs should be separated, placing the whites in a large bowl and reserving the yolks in a small separate container.
Step 2 : Next, the whites should be beaten vigorously until a foamy consistency is achieved, and then add the cream of tartar, continuing to beat until the whites form stiff peaks.
Step 3 : It is important to preheat a heavy skillet, and if using a non-stick skillet, it should be preheated as soon as the egg mixture is ready.
Step 4 : Add the cooking oil to the skillet, 2 to 3 tablespoons at a time.
Step 5 : In another container, gently break the egg yolks and add them to the beaten whites, mixing carefully until a homogeneous light yellow color is obtained.
Step 6 : Be careful not to overmix to maintain the fluffy texture of the batter.
Step 7 : Drain the cooked green beans and gently fold them into the mixture.
Step 8 : Using a large spoon, form mounds of the mixture and place them in the preheated skillet with oil.
Step 9 : Cook over medium heat until golden on all sides, then carefully remove and place on paper towels to drain excess oil.
Step 10 : Once all the green beans are cooked, remove excess oil from the skillet and wipe with a paper towel.
Step 11 : Reheat the skillet with a tablespoon of oil and add the onion slices, cooking until translucent.
Step 12 : Add the tomatoes and, if needed, a little water to create a sauce.
Step 13 : Season with salt to taste and let simmer over low heat for about 5 minutes, stirring occasionally.
Step 14 : Once the sauce is ready, carefully add the green beans wrapped in egg and cover with the sauce, heating them again.
