Guatemalan Fresh Cheese
Ingredients
5 liters of Cow milk
3 tablespoons of Water
¾ Rennet tablet
1 pinch of Salt
Chili
Preparation
Step 1 : In a deep container or pot, add the milk.
Step 2 : In a separate cup, add the 3 tablespoons of water with a little salt, and dissolve the rennet. Incorporate this mixture into the milk. Let it sit for one to two hours until the cheese has risen to the surface.
Step 3 : Check that the milk is curdled with a knife.
Step 4 : Cut by hand into medium squares so that it is not difficult to remove.
Step 5 : Let it settle to the bottom of the container, this takes approximately half an hour.
Step 6 : Then start squeezing until it has no serum, and it's the moment you can add salt or chili.
Step 7 : Knead it well and place the cheese in a mold or shape the cheese with your hands.
