Ingredients

12 Small tortillas (store-bought or homemade)

500 grams of Ground beef or pork

1 Finely chopped medium onion

2 Minced garlic cloves

2 Medium tomatoes, chopped

1 teaspoon of Cumin

1 teaspoon of Oregano

Salt and pepper to taste

Frying oil

Crumbled fresh cheese (for garnish)

Chopped fresh parsley or cilantro (optional)

For the tomato sauce:

3 Large roasted and peeled tomatoes

½ Chopped onion

1 Garlic clove

1 Chopped red bell pepper (optional)

Salt and pepper to taste

Preparation

Step 1 : To prepare the tortillas, if using homemade tortillas, they should be fried in hot oil until crispy and golden.

Step 2 : It is important to drain them on paper towels and set them aside.

Step 3 : If using store-bought tortillas, simply fry them until crispy.

Step 4 : To cook the meat, heat a little oil in a large skillet and sauté the onion and garlic until golden and fragrant.

Step 5 : Then, add the ground meat and cook over medium heat, breaking it up with a spoon to brown evenly.

Step 6 : Next, add the chopped tomatoes, cumin, oregano, salt, and pepper.

Step 7 : Cook over low heat until the juices reduce and the meat mixture is thick and well-seasoned.

Step 8 : Adjust the seasoning to taste and remove from heat.

Step 9 : To prepare the tomato sauce, blend the roasted tomatoes with the onion, garlic, and sweet pepper until smooth.

Step 10 : Then, pour the mixture into a saucepan and simmer over low heat for about 10-15 minutes, seasoning with salt and pepper to taste.

Step 11 : The sauce should have a slightly thick consistency.

Step 12 : To assemble the garnachas, place a portion of ground meat on each crispy tortilla.

Step 13 : Then, add a spoonful of the tomato sauce on top of the meat.
