Guatemalan Pork Carnitas Taco
Ingredients
1 kilogram of Pork lard
1 kilogram of Pork meat (tail)
2 teaspoons of Salt
½ teaspoon of Black pepper (ground)
1 cup of Chili de Árbol sauce
Preparation
Step 1 : Melt the lard in a saucepan over medium heat and add the chopped pork tail, salt, and pepper. Sauté until the pork tail is tender.
Step 2 : Cook over low heat for 1 hour without letting the meat brown. After this time, remove the meat and let it cool.
Step 3 : Shred the meat with a fork and remove the fat. In a saucepan, place the meat and add the chili de Árbol sauce.
Step 4 : Cook over medium heat, stirring occasionally.
Step 5 : Serve with some corn tortillas.
