Ingredients
2 pounds of Cut turkey
½ pound of Tomato
4 ounces of Miltomate
2 Guaque chilies
1 Pass chilies
1 Red bell pepper chile
6 Garlic cloves
1 Onion
4 Cilantro stems
10 Mint stems
½ ounce of Sesame seeds
4 Peppercorns
1 ounce of Pepitoria (ground pumpkin seeds)
Onion stalks
Achiote
1 pinch of Salt
Cobanero chile
Preparation
Step 1 : To prepare this recipe, start cooking the turkey with salt and a bunch of onion stalks, mint, and cilantro.
Step 2 : Then, sauté the pepitoria, sesame seeds, and peppercorns.
Step 3 : Next, roast the chilies, garlic, onion, tomato, and miltomate.
Step 4 : Afterward, blend the mixture and strain it.
Step 5 : Add the mixture to the cooked turkey and bring to a boil, seasoning with salt, achiote, and cobanero chili.
