Plantain Mole
Ingredients
4 Ripe plantains
60 grams of Pepitoria
30 grams of Sesame seeds
1 Cinnamon stick
1 Cinnamon chocolate tablet
6 Cloves
2 Sweet bread rolls soaked
10 Ripe tomatoes
1 Chile guaque or pasa
1 Achiote
¼ cup of Oil
½ pound of Sugar and salt
Preparation
Step 1 : Preparation begins by cutting the plantains into slices and frying them in hot oil.
Step 2 : Next, toast all the spices and sweet bread rolls.
Step 3 : Over medium heat, cook the ripe tomatoes along with the seedless chile.
Step 4 : Then, blend the toasted ingredients, cinnamon chocolate, and the cooked mixture.
Step 5 : Once everything is blended, add the achiote and soaked bread rolls.
Step 6 : Strain this mixture through a sieve, add sugar, and season with salt.
Step 7 : To finish, drown the plantains in the mixture and let it boil for a moment.
Step 8 : When serving, sprinkle some sesame seeds on top.
Step 9 : This dish can be accompanied by tortillas, bread, or savory crackers.
