Ingredients

500 grams of Dried black beans

1 Chopped onion

100 grams of Lard

1 tablespoon of Salt

Feta cheese

Preparation

Step 1 : To prepare the beans, they must first be soaked overnight.

Step 2 : Then, drain them and put them in a pot with plenty of water, along with the peeled and chopped onion.

Step 3 : Bring to a simmer over low heat and cover the pot for about two hours, adding more water if necessary.

Step 4 : Once cooked, mix the beans with lard and put them in a blender until you get a thick puree.

Step 5 : Heat the puree in a skillet over moderate heat with lard to dry it as much as possible.

Step 6 : To serve, accompany the beans with tortillas sprinkled with coarse grated sweet feta cheese.
