Ingredients

1 ½ pound of Pumpkin

1 Carrot

2 Green apples

1 cup of Sour cream

100 grams of Parmesan cheese

1 Red onion

3 Garlic cloves

Maple syrup or sugar for browning

½ cup of Toasted sunflower seeds

Preparation

Step 1 : Cut the pumpkin into pieces and place on a baking tray with a little water in the oven until soft, about 20 minutes.

Step 2 : Then, sprinkle with maple syrup or sugar and bake for 4 more minutes.

Step 3 : In a pot, sauté the garlic and onion with a little olive oil.

Step 4 : Next, add 2 cups of water and bring to a boil along with the chopped apples and carrot.

Step 5 : Once the vegetables are cooked, blend them with sour cream and process all ingredients in a blender.

Step 6 : Bring the mixture to a boil again and add Parmesan cheese.

Step 7 : When serving, sprinkle with toasted sunflower seeds on top.
