Stuffed Onions
Ingredients
8 Medium onions
1 Large green pepper
500 grams of Tuna in olive oil
3 Medium ripe tomatoes
2 Garlic cloves
1 Bay leaf
Black pepper
1 pinch of Salt
Parsley
Extra virgin olive oil
1 cup of Wine (from Rueda)
1 liter of Chicken broth
Preparation
Step 1 : To prepare this delicious dish, start by peeling the onions and hollowing them out, then fill them with the tomato mixture.
Step 2 : Next, cover the hollow with the first small onion ball from the hollowing process.
Step 3 : In a large saucepan, add a little oil and, once hot, add the hollowed onions, green pepper, garlic cloves (finely chopped), and the peeled diced tomatoes.
Step 4 : Sauté everything over low heat for about ten minutes.
Step 5 : While the sauce is cooking, in a separate skillet, heat some oil and fry the onions.
Step 6 : Once ready, transfer them to the saucepan with the sauce.
Step 7 : Then, add the white wine and let the alcohol evaporate for five minutes.
Step 8 : Season with salt, ground black pepper, bay leaf, and cover everything with chicken broth.
Step 9 : Let it cook over low heat for an hour and a half.
Step 10 : Once the onions are cooked, remove them and pass the sauce through a strainer.
Step 11 : Then, return the onions to the saucepan and cover them with the prepared sauce.
Step 12 : Before serving, you can sprinkle with chopped parsley or hard-boiled eggs to taste.
