Traditional Chipilín Rice

Ingredients

1 bundle of chipilín

4 oz broken rice

3 medium tomatoes

1 medium onion

2 large garlic cloves

2 cups of water

Olive oil

Salt to taste

Preparation

Step 1 : To prepare this recipe, first remove the chipilín leaves from their branches and cook them with water and salt.

Step 2 : Once cooked, remove them from the water and set aside.

Step 3 : Then, wash the rice and drain.

Step 4 : Peel the tomatoes, chop and set aside.

Step 5 : Next, fry the chopped garlic and onion with olive oil.

Step 6 : Add the chopped tomato and the remaining sofrito of chipilín.

Step 7 : Proceed to fry the rice with oil and add it to the chipilín sofrito.

Step 8 : Add the two cups of water and cook for 15 minutes over low heat with the pot covered.

Step 9 : Finally, serve this delicious chipilín rice hot.
