Traditional Subanik

Traditional Subanik is a festive dish of pre-Hispanic origin with two versions, in a banana leaf stew and as a little tamale in a mashan leaf. The stew is prepared with meats, tomatoes, onions, garlic, chilies, and achiote, cooked slowly and wrapped in leaves.

The traditional Subanik recipe requires boiled meats and a thick stew with roasted and ground ingredients on stone. Subsequently, the stew is mixed with the meats and wrapped in banana leaves to cook slowly.

The apaste is carefully assembled with banana and mashan leaves to achieve a delicious result full of culinary tradition.

Ingredients

1 pound of Sliced chompipe

1 pound of Pork shoulder

1 pound of Chopped hen

25 Tomatoes

½ pound of Skinless miltomate

6 Seedless red bell peppers

2 Garlic cloves

2 Seedless guaque chilies

1 Seedless chile pasa

Cobanero chili

8 Mashan leaves

5 Roasted banana leaves

Cibaque

1 Clay apaste

Preparation

Step 1 : Start by washing and portioning the meats according to the recipe's instructions.

Step 2 : Then, place the meats in a pot with water and add salt, cook until boiled.

Step 3 : On a griddle, separately roast the miltomate, tomato, onion, garlic, and chilies.

Step 4 : Then, grind on stone without adding water, adding a bit of achiote if necessary.

Step 5 : The resulting stew should have a thick consistency, and, if needed, a little of the water where the meats were cooked can be added.

Step 6 : Next, mix the stew with the meats and season with salt.

Step 7 : Then, proceed to place this mixture in an apaste, first covering the apaste with deveined mashan leaves and in the center with the banana leaves forming a sort of flower.

Step 8 : Tie the meats with the cibaque and cook slowly for about an hour.

Step 9 : To assemble the apaste, roast the banana leaves one by one.

Step 10 : At the bottom of the apaste, place the cibaque forming an interlacing that protrudes from the edges.

Step 11 : Next, place the mashan leaves and then the banana leaves forming a flower covering.

Step 12 : Tie with cibaque and create a braid with the interlacing of the leaves.
