Guatemalan Plantains in Mole Sauce

This exquisite dish brings together ingredients from two continents, with the main actor being the Maya-origin chocolate, combined with sesame seeds, chili peppers, and cinnamon brought by the Spaniards, all mixed with slices of fried plantain.

Plantains in mole sauce is a traditional Guatemalan dish that combines the sweetness of ripe plantains with the complexity of a mole sauce made with a blend of spices and chili peppers.

It is a thick and rich sauce made from various ingredients such as chili peppers, seeds, spices, bread, and chocolate.

It is a simple dish to prepare, but it requires time and patience to cook the mole sauce slowly until it reaches the right texture and flavor.

The plantains are peeled, sliced thickly, lightly fried, and then mixed with the mole sauce to absorb its flavor and texture.

A Bit of Its History

It dates back to the pre-Hispanic era of the region, when indigenous cultures used corn and other staple foods to prepare a variety of dishes.

The mole sauce also has its roots in pre-Hispanic culture, where a sauce of chili peppers and seeds was made to accompany meats and other foods.

With the arrival of the Spaniards and the introduction of chocolate, the mole sauce began to evolve into the more complex version we know today.

Cooking Tips

Ensure that the plantains are ripe to complement the mole sauce's sweetness.

Use high-quality mole sauce or make it from scratch with fresh and high-quality ingredients, cooking it slowly over low heat.

It is also important not to fry the plantains for too long to prevent them from becoming too soft and losing their crispy texture.

Serve hot alongside rice and beans for an authentic regional culinary experience.
