Guatemalan Torrejas

Ingredients

8 Sweet bread shells

4 Eggs

1 liter of Milk

¾ cup of Cornstarch

500 grams of Sugar

1 liter of Water

2 Cinnamon sticks

1 teaspoon of Liquid vanilla

¼ cup of Raisins

½ cup of Red sugar

Preparation

Step 1 : Boil the milk with 200 grams of sugar and a cinnamon stick. When it boils, add the vanilla.

Step 2 : Dissolve the cornstarch in cold water and add it to the milk while stirring. Remove from heat and let it cool.

Step 3 : Separate the egg whites from the yolks and beat the whites to stiff peaks, then add the yolks. Remove the top of the sweet bread shells and fill with the previously made custard.

Step 4 : Cover the shells with the egg mixture. Heat the oil and fry the shells. Remove from the oil and set aside.

Step 5 : Boil the water with the remaining sugar and cinnamon. Dip the torrejas in the syrup, decorate with raisins and sugar.
