Alborotos can be kept for 5 days at room temperature and up to 5 days in the refrigerator wrapped in plastic bags.
Traditional Alboroto
Ingredients
1 pound of Maicillo
3 cups of Water
Juice of 6 lemons
4 pounds of Panela
Food coloring
Paraffin paper
Preparation
Step 1 : To prepare the Guatemalan alboroto, first wash the maicillo and let it dry.
Step 2 : In a medium pot over low heat, add the maicillos and stir until they start to pop, covering the pot during this process.
Step 3 : Once ready, set them aside on a plate and repeat the process with the remaining maicillos.
Step 4 : In another pot, place the panela and cups of water, cook over high heat until it boils, adding the lemon juice and continuing to cook until a caramel forms.
Step 5 : Pour this caramel over the maicillo and mix with a plastic or wooden paddle.
Step 6 : Wait for it to cool to handle it better with your hands.
Step 7 : With hands moistened with water, take portions of the alboroto and shape them into a round shape.
Step 8 : These portions are placed on aluminum foil, repeating the process with the entire mixture.
Step 9 : In a container with water and food coloring, soak each sphere.
Step 10 : The alboroto can be enjoyed with family and can be stored for 5 days at room temperature or up to 5 days in the refrigerator, wrapped in plastic bags.
