Preparation

Step 1 : To prepare the pasta, it is recommended to start by making a well in the flour and placing the two egg yolks in the center, gradually mixing until a uniform dough is obtained.

Step 2 : Next, add the previously squeezed chopped chipilín and mix well.

Step 3 : If the dough is too dry, you can add a little of the reserved egg white until achieving a smooth and firm consistency.

Step 4 : Form a ball and coat it with olive oil, then let it rest for an hour at room temperature.

Step 5 : After resting, roll out the dough as thin as possible with a rolling pin and then roll it into a cylinder.

Step 6 : Cut into portions about the width of a finger and let dry before cooking.

Step 7 : To cook the pasta, bring a pot of water to a boil with a splash of olive oil and salt.

Step 8 : Once boiling, add the pasta and cook for nine minutes.

Step 9 : For the sauce, chop onion, bell pepper, garlic, pancetta, and parsley.

Step 10 : In a skillet, sauté the pancetta with a little olive oil until golden.

Step 11 : Then, add the onion and garlic, cooking until golden.

Step 12 : Add the bell pepper, white wine, salt, and pepper to taste, then incorporate the cream and nutmeg.

Step 13 : Adjust the flavor and finish seasoning with salt, pepper, and half of the Parmesan cheese, letting the sauce thicken until it reaches the desired consistency.
