Ingredients

1 ½ kilogram of Free-range chicken

1 Black chorizo

4 Sage leaves

1 teaspoon of Salt

1 pinch of Pepper

600 grams of Roasted potatoes

1 cup of White wine

500 grams of Leek

1 Lettuce

1 tablespoon of Olive oil

1 teaspoon of Mustard

Preparation

Step 1 : Preheat the oven to 180°C

Step 2 : Remove excess fat from the chicken and carefully separate the skin from the meat, rubbing it by hand to prevent tearing the skin

Step 3 : Slice the chorizo ​​thickly, with the help of your fingers insert them under the chicken skin, alternating with sage leaves

Step 4 : Season the inside of the chicken with salt, a little pepper, and add the lemon sliced

Step 5 : Tie the chicken legs with cooking twine, place them on a tray, wrap the washed and sliced ​​potatoes, drizzle with wine, and bake

Step 6 : Approximately 30 minutes later, remove the tray from the oven and add the sliced ​​leeks. Bake for another 30 minutes, stirring the pan occasionally, and baste the roast with the sauce

Step 7 : Place the lettuce in a salad bowl and drizzle with the previously prepared mixture of olive oil, mustard, and fine salt. Serve the chicken on top of this
