Ingredients

6 pounds of Boneless leg of pork

4 pounds of Tomato

1 pound of Onion

2 Heads of garlic

2 Butter bars

Thyme

2 tablespoons of Mustard

Salt

500 milliliters of Cola carbonated beverage

Preparation

Step 1 : With a thin knife, the leg of pork should be pierced all over to allow the flavors to penetrate.

Step 2 : Then, the garlic should be blended with a little oil to form a paste, facilitating the next step.

Step 3 : Add half a bar of butter to the garlic, salt, pepper, thyme, oregano, and mustard.

Step 4 : With the hand, spread this mixture over the surface of the leg for about five minutes, cover, and refrigerate.

Step 5 : This process can be repeated every 12 or 24 hours.

Step 6 : On the day it is to be baked, blend the tomato, onion, and capers with the cola carbonated beverage.

Step 7 : A little garlic can be added to this sauce.

Step 8 : Season should be adjusted and salt and pepper added if necessary, adding water if the sauce is too thick.

Step 9 : Then, pour the sauce over the leg and cover with aluminum foil.

Step 10 : The oven should be preheated to 325 degrees Celsius, and the leg baked for two hours.

Step 11 : At about an hour and a half of baking, the leg can be uncovered and the olives placed to brown to taste.

Step 12 : To ensure it is completely cooked, a cooking thermometer can be used.

Step 13 : The internal temperature of the pork leg should reach 158 degrees Fahrenheit or 72 degrees Celsius.

Step 14 : Once ready, remove the leg from the oven and slice it.

Step 15 : Then, place the desired portions on a plate and pour the liquid obtained from baking.

Step 16 : Serve with preferred side dishes.
