Bean with Chicharrón
Ingredients
1 pound of Dry beans
1 pound of Pork chicharrón
13 cups of Water
1 tablespoon of Olive oil
½ Chopped onion
2 Crushed garlic cloves
2 Chopped scallions
1 Chopped tomato
1 Green plantain in pieces
1 Chopped carrot
½ teaspoon of Ground cumin
½ teaspoon of Achiote
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : In a large pot, heat the oil over medium heat.
Step 2 : Next, add the onions and cook for 3 to 4 minutes until translucent.
Step 3 : Then, add the tomatoes, garlic, scallions, and cook for another 3 minutes.
Step 4 : After that, add the chicharrón, stir, and cook for another 2 minutes.
Step 5 : Add the beans, carrots, cumin, achiote, and water.
Step 6 : Bring the mixture to a boil, cover the pot, and reduce the heat to medium-low.
Step 7 : Cook for about 1 hour.
Step 8 : Then, add the plantains and cook for 45 minutes to 1 hour until the beans are cooked.
Step 9 : Additional water can be added if necessary.
Step 10 : Adjust salt and pepper, stir, and serve.
