Black Bean with Epazote and Meat

Black Bean with Epazote and Meat

Ingredients

1 kilogram of Black beans

500 grams of Beef

2 Onions

4 Garlic cloves

Epazote leaves

1 tablespoon of Lard or oil

1 pinch of Salt

Preparation

Step 1 : To prepare this dish, the black beans must first be cleaned very well.

Step 2 : Then, they are washed several times and left to soak overnight.

Step 3 : The next day, in a preheated pressure cooker, add the beans, onion, and garlic, cover, and place the valve.

Step 4 : While the beans are cooking, prepare the beef by chopping and frying it in a hot pan with oil.

Step 5 : Once the pressure cooker valve starts to turn, count 25 minutes and turn it off.

Step 6 : Let the pot rest for about 5 to 7 minutes, check that there is no more steam and open it to check that the beans are tender by pressing them with your fingers.

Step 7 : Then, add salt, epazote, and, if desired, a tablespoon of lard or oil.

Step 8 : Close the cooker again and let it boil for another 5 minutes.

Step 9 : Once ready, add the previously prepared meat and mix well.

Step 10 : This dish can be served with rice.
