Chicken in Sesame and Pumpkin Sauce

Ingredients

1 kilogram of Boneless, skinless chicken thighs

6 cups of Chicken broth

1 ½ cup of Onions, diced

1 ½ cup of Peeled and unsalted pumpkin seeds

1 cup of Unsalted roasted peanuts

1 cup of Sesame seeds

6 tablespoons of Vegetable oil

250 grams of Fresh peeled tomatoes

2 Seedless poblano peppers

2 cups of Cilantro

1 cup of Parsley

½ teaspoon of Mixed spices

½ teaspoon of Black pepper

1 pinch of Salt

Preparation

Step 1 : In a large saucepan, bring the broth and 1 ½ cups of diced onion to a boil. Add the chicken pieces and reduce heat, letting it simmer for about 10 minutes until the chicken is partially cooked. Remove the pan from heat and let the chicken cool in the broth

Step 2 : Toast the pumpkin seeds in a dry skillet over medium-high heat, stirring constantly until the seeds start to crackle (3-4 minutes)

Step 3 : Transfer them to a plate and toast the peanuts in the same skillet until lightly golden (2-3 minutes) and transfer them to the plate

Step 4 : Place the pumpkin seeds, peanuts, sesame seeds in a blender with the spices, cloves, chopped pepper for 30 seconds until a paste forms, transfer everything to a bowl

Step 5 : Chop the tomatoes, 1 ½ cups of chopped onion and the garlic into a puree

Step 6 : Add the peppers, cilantro, and parsley and chop intermittently until the ingredients are well blended

Step 7 : Heat the butter and oil in a large saucepan over medium-high heat. Add the mixture with the seeds and cook, stirring constantly for 4 minutes

Step 8 : Add 2 ½ cups of cooled chicken broth and the mixture with the tomatoes

Step 9 : Stir and cook for 15 minutes. Taste and add salt to taste. Add the chicken and an additional 2 cups of broth and simmer uncovered for 10/15 minutes until the sauce thickens

Step 10 : Serve with warm tortillas
