Ingredients
1 Gallo
35 Tomatoes
3 White onions
3 Garlic cloves
1 Jalapeño
1 Chile pasa
½ Cinnamon stick
4 Cloves
4 Allspice
12 ounces of Suchiles soda
1 ounce of Grated rapadura
1 cup of Vinegar
3 Bay leaves
4 Sprigs of thyme
1 pinch of Salt
3 ounces of Lard
Ground pepper
Preparation
Step 1 : Clean the rooster and cut it into portions, then season with salt and pepper.
Step 2 : Grill the tomatoes, onions, garlic, and cinnamon stick on a clay comal, being careful not to burn them.
Step 3 : Once grilled, peel the tomato and grind everything in a stone, excluding the cinnamon.
Step 4 : Next, heat two ounces of lard in a clay pot and brown the rooster portions on both sides.
Step 5 : Add the jalapeño, chile pasa, clove, allspice, cinnamon, bay leaves, and thyme, sautéing for a few minutes.
Step 6 : Add the ground spices from the stone and let it heat and mix.
Step 7 : Then, add the Suchiles soda and the rapadura.
Step 8 : Taste the acidity level and if necessary, add vinegar.
Step 9 : Cover and cook over medium heat for approximately three hours.
