Guatemalan Baked Pork Leg
Ingredients
10 pounds of Boneless pork leg
3 pounds of Chorizo
3 pounds of Longaniza
1 pound of Large capers
2 pounds of Boneless olives
Mustard
Garlic
Bay leaf
Thyme
Red wine
2 cups of Beef broth
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : To prepare the stuffed pork leg, holes should be chopped in different parts of the leg and each hole filled with chorizo, longaniza, capers, and olives.
Step 2 : Then, the entire leg is covered with salt, pepper, mustard, bay leaf, powdered thyme, red wine, and beef broth, and left to marinate overnight.
Step 3 : The next day, preheat the oven to 325°F.
Step 4 : and cover the meat with aluminum foil before baking it.
Step 5 : After 90 minutes of cooking, remove the aluminum foil and sprinkle the accumulated juices in the tray over the meat.
Step 6 : Bake for approximately 3 and a half more hours, ensuring that all the meat is thoroughly cooked.
Step 7 : Once baked, let the pork leg rest.
Step 8 : Meanwhile, bring the sauce in which the meat was marinated and cooked to a boil to concentrate it a bit.
Step 9 : Finally, serve the pork leg along with the concentrated sauce.
