Ingredients

1 Pork ribs

3 Ripe tomatoes

5 Garlic cloves

8 Potatoes

½ cup of Olive oil

1 pinch of Sweet paprika

Food coloring

1 pinch of Salt

Preparation

Step 1 : Chop the onion and place it in a pot with olive oil to sauté.

Step 2 : The size of the onion will depend on each person's taste, it can be finely chopped or a bit thicker if larger pieces are preferred.

Step 3 : Grate the tomato to use it whole, add it to the onion and sauté together.

Step 4 : Then, cut the ribs into pieces and add them to the pot with the tomato and onion sauté.

Step 5 : Cook everything together, stirring to ensure the meat absorbs the flavor of the sauté.

Step 6 : Next, add water and the potatoes to continue with the stew preparation.

Step 7 : Potatoes should be washed, peeled, and cut into medium-sized pieces.

Step 8 : Season the rib stew with sweet paprika, food coloring, and let it cook for 45 minutes over medium heat.

Step 9 : Optionally, a bit of spicy paprika can be added.

Step 10 : Once the time has elapsed, check that both the potatoes and the ribs are cooked and tender.

Step 11 : If ready, serve the hot pork rib stew.
