Ingredients

4 Chicken thighs

4 Tomatoes

2 Carrots

2 Medium potatoes

½ cup of Pitted green olives

2 cups of Chicken broth

1 teaspoon of Oregano

1 teaspoon of Sugar

2 tablespoons of Vegetable oil

1 teaspoon of Soy sauce

1 teaspoon of Worcestershire sauce

2 tablespoons of Tomato paste

1 teaspoon of Ground cumin

1 teaspoon of Chili powder

2 Juiced lemons

2 Red bell peppers

1 Small red onion

2 Cloves of garlic

Water

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : First, place the chicken in a bowl and add the juice of 2 lemons

Step 2 : Add the oregano, thinly sliced onion, crushed garlic, sliced tomatoes, and olives. Season with a bit of salt and pepper. Mix and let marinate for half an hour

Step 3 : Heat a little oil in a pot and add the chicken broth liquid with sugar

Step 4 : Mix for a few minutes until the mixture turns golden

Step 5 : Place the chicken in a casserole dish and brown on both sides. Include the chili and cumin and fry for another minute before adding the tomato paste

Step 6 : Continue frying and add water to cover the chicken

Step 7 : Cover the casserole dish and let it boil. Then add soy sauce, Worcestershire sauce, red bell peppers, carrots, and potatoes

Step 8 : Cover again and simmer over medium-low heat until everything is well cooked. This process will take approximately 45 minutes

Step 9 : Season to taste and let sit for a few minutes before serving with some rice and tortillas
