5 pounds of Lomito de res
750 milliliters of Brandy
3 Manzanas en cubos
3 Chiles guaque picados
3 tablespoons of Hojas de estragón seco
2 teaspoons of Canela en polvo
4 Dientes de ajo picados
1 Cebolla picada
2 Dientes de ajo picados
½ Cebolla picada
½ liter of Crema pura
1 ounce of Mantequilla sin sal

1 pinch of Sal
1 pinch of Pimienta

Step 1 : To prepare this dish, all the marinade ingredients should be placed in a large container.
Step 2 : The meat should marinate in this mixture overnight, covered and refrigerated so that the flavors integrate properly.
Step 3 : Next, remove the meat from the container and heat a skillet to 300 degrees Celsius to sear it on both sides.
Step 4 : Once the meat is seared, place it on a baking tray with the marinade liquid and cover with aluminum foil.
Step 5 : Then, bake at 250 degrees Celsius for about 25 minutes.
Step 6 : When removing the meat from the oven, it is important to save the juices released in the tray.
Step 7 : Next, sauté the onion and garlic in butter.
