Ingredients

6 pounds of Pork

2 Onions in julienne

2 Bunches of green onions

2 Jalapeño peppers

4 cups of Lard

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : In an iron or copper pot, pour the cold lard and heat over low heat.

Step 2 : Add the pork and season with salt and pepper to taste while boiling.

Step 3 : Add jalapeños, onions and green onions halfway through cooking.

Step 4 : Cook for 30 minutes, constantly stirring to brown evenly.

Step 5 : Finally, serve the pork cracklings accompanied by tortilla and lemon.
