2 pounds of Beef ribs
2 Cubed squashes
4 Cubed potatoes
2 ounces of Green beans
10 Tomatoes
2 White onions
2 Garlic cloves
5 Culantro sprigs
5 Seasoned culantro sprigs
5 Apazote sprigs
Ground pepper
1 pinch of Salt

Preparation
Step 1 : To prepare this recipe, start by cooking the ribs in two liters of water, previously washed and cut into pieces.
Step 2 : Add half an onion, a tomato halved, culantro, and salt, and let it cook.
Step 3 : During the cooking process, add the peeled and chopped vegetables when the meat is half cooked, and continue cooking until they are soft.
Step 4 : For the sauce, roast the tomatoes, onion, and garlic in a comal.
Step 5 : Once the tomatoes are roasted, remove the skin and grind all the ingredients in a grinding stone or blender.
Step 6 : Add this sauce to the pot where the vegetables and meat are.
Step 7 : Incorporate the culantro, apazote, and thicken with corn dough.
Step 8 : Let it boil for approximately 5 minutes, making sure the vegetables are al dente.
