Ingredients

1 kilogram of Clean red beans

½ kilogram of Tomato

200 grams of Miltomate (tomatillo de cáscara)

3 Garlic cloves

1 Onion diced in small cubes

2 cups of Pork cracklings

200 grams of Squash

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : To prepare this recipe, you must start by soaking the beans the day before cooking.

Step 2 : It is recommended to remove any particles they may have and then wash them thoroughly with water.

Step 3 : The next day, it is necessary to change the water of the beans and place them in a pressure cooker with water.

Step 4 : Add a pinch of salt and cook for 30 to 40 minutes, or until tender.

Step 5 : While the beans are cooking, you can proceed to heat a frying pan and sauté the tomato, garlic, onion, and miltomates previously washed and cut into small squares in hot oil.

Step 6 : Once they are soft, remove from heat and let cool.

Step 7 : Then, blend with a little water.

Step 8 : Subsequently, prepare the squash by removing all the skin and cooking it for approximately 15 minutes, or until soft.

Step 9 : Add salt to taste and set aside once ready.

Step 10 : Once the beans are tender, add the blended vegetables, squash, and the pork cracklings previously cut into medium pieces.

Step 11 : Continue cooking for about 20 more minutes, until the ingredients are well combined and the cracklings soften.

Step 12 : Finally, season with salt to taste and check the seasoning of the preparation before serving.
