Ingredients

1 Pork head

1 pound of Tomato

½ pound of Miltomate

2 Guaque peppers

1 Bell pepper

12 ounces of Pork liver

3 Corn tortillas

Achiote

1 pinch of Salt

Preparation

Step 1 : To prepare this recipe, first clean the pork head and boil it in a large pot with water and salt for about two hours, until the ears and skin are soft.

Step 2 : Then remove all the meat from the head and chop the ears and skin into small cubes.

Step 3 : The next step is to boil the liver separately for 20 minutes.

Step 4 : After cooking, dice half of it into small cubes and blend the other half.

Step 5 : The next step is to thicken the seasoning and it will be ready to serve.

Step 6 : To prepare the seasoning, cook the tomato, miltomate, and peppers with a little water.

Step 7 : Once cooked, blend and strain them.

Step 8 : Then add the previously soaked tortillas, blend, and mix.

Step 9 : Fry the seasoning with a little oil and season with salt and achiote.

Step 10 : Boil for a few minutes and add the diced meat, ears, and skin along with the liver.
