Rice and beans is a traditional dish of the Afrodescendant people of Morales Izabal. With delicious Creole flavors, it is prepared by cooking the rice with bean broth and coconut milk, and served with a chicken stew and fried plantains.
To prepare Rice and Beans, garlic, onion, green bell pepper, and red bell pepper should be sautéed, then add the rice and cook with bean broth and coconut milk.
Separately, the chicken should be seared and cooked with tomato, onion, garlic, celery, and spices. Finally, fry plantains and serve with grated beetroot.

Ingredients
1 pound of Rice
1 pound of Cooked red beans
1 liter of Bean broth
1 liter of Coconut milk
1 Head of garlic
3 Onions
2 Bell peppers
1 Green bell pepper
Bay leaf
Thyme
2 ½ pounds of Chicken
2 Ripe plantains
Large beetroots
Vinegar
1 pinch of Salt
1 pinch of Pepper
Oil for frying
Preparation
Step 1 : To prepare this exquisite dish, start by chopping the garlic, onion, green bell pepper, and red bell pepper, and then sauté them.
Step 2 : Add the rice and sauté as well, incorporating the bean broth and coconut milk, along with the bay leaf, thyme, salt, and pepper.
Step 3 : Cook over low heat.
Step 4 : Next, wash and cut the chicken into pieces, season it with salt and pepper, and sear it in a pot.
Step 5 : Then, blend the tomato, one onion, one red bell pepper, three cloves of garlic, two celery stalks, and add it to the chicken along with the bay leaf and thyme.
Step 6 : Let the stew cook over low heat for 30 minutes.
Step 7 : On the other hand, slice the plantains and fry them in a separate pan.
Step 8 : Also, wash and peel the beetroot, grate it raw, and add salt and vinegar.
