Lemon zest

100 grams of Unsalted butter

Mandarin lemon juice

150 grams of Butter

1 tablespoon of Sherry vinegar

4 Egg yolks

1 pinch of Salt

1 pinch of White pepper

Step 1 : To prepare these exquisite grilled shrimp, they must be started by cleaning them properly, removing the head, shell, and entrails, leaving only the tail.

Step 2 : Then, they are washed and dried before skewering them vertically through the entire tail.

Step 3 : Once placed on the skewers, salt and white pepper are added to taste.

Step 4 : For the citrus butter, ensure that the butter is creamy and at room temperature before mixing it with the lemon juice.

Step 5 : Beat the mixture until a homogeneous texture is achieved.
