Ingredients

5 liters of Water

1 Dark panela

1 Pineapple

1 pound of Nance

1 pound of Tamarind

1 Cinnamon stick

10 Peppercorns

10 Cloves

¼ Tamarind liquor

1 Young rooster

3 tablespoons of Vegetable oil

1 Sprig of thyme

6 Bay leaves

10 Tomatoes

1 White onion

3 Cloves of garlic

1 cup of Pitted prunes

Preparation

Step 1 : To prepare the chicha, start by washing and disinfecting the ingredients and work areas.

Step 2 : Cut the pineapple into pieces, keeping the peel.

Step 3 : Soak the tamarind in some of the water you will use and crush the nances in a container, reserving them for later.

Step 4 : Scrape the panela with a knife and put it in a container, adding the water, tamarind liquor, and the rest of the fruits and spices.

Step 5 : Let the mixture ferment for at least eight days in a cool place.

Step 6 : Then, strain the preparation, discarding the solid ingredients and using only the already fermented liquid.

Step 7 : For the rooster, repeat the process of washing and disinfecting the ingredients and work areas.

Step 8 : Cut the rooster into pieces and brown it in a skillet with oil, sealing each side for two minutes.

Step 9 : Pierce the meat with a knife and put it in a pot with three liters of chicha, bay leaves, thyme, and garlic, cooking for an hour.

Step 10 : Roast the tomatoes, onion, and remaining garlic.

Step 11 : When the rooster is cooked with the chicha, blend the roasted tomatoes, onion, and garlic.

Step 12 : Remove the excess chicha and add the blended vegetables, along with the prunes, cooking for an additional 10 minutes.

Step 13 : Serve the rooster with chicha alongside white rice.
