Ingredients

2 pounds of Backbone

1 pound of White beans

2 Bay leaves

1 Garlic head

1 Onion

Thyme

3 tablespoons of Oil

3 tablespoons of Chopped onion

8 Chopped tomatoes

½ teaspoon of Cumin

½ teaspoon of Oregano

1 Chile guaque

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The white beans are soaked overnight in plenty of water.

Step 2 : Then, they are drained and washed before boiling them with garlic, onion, bay leaves, thyme, and salt, until soft.

Step 3 : On the other hand, fry the seasoning ingredients, blend them, and add them to the beans along with the backbone to cook over low heat for about 35 minutes.

Step 4 : To thicken the mixture, blend a portion of the beans.
