Ingredients
500 grams of Panela
1 cup of Water
1 cup of Coconut milk
½ teaspoon of Star anise
Preparation
Step 1 : Place the panela, water, and star anise in a pot over high heat.
Step 2 : Stir until the panela melts and begins to thicken.
Step 3 : Add the coconut milk and continue stirring until a thicker consistency is achieved.
Step 4 : To check the right consistency, perform the tapping test.
Step 5 : Drop a bit of the mixture into cold water; if it holds its shape and becomes brittle, it’s ready.
Step 6 : Then, pour the mixture onto an oiled surface.
Step 7 : Once the melcocha is slightly cooled and manageable, lift it with oiled hands to prevent sticking.
Step 8 : Stretch it until it takes on a light color.
Step 9 : Finally, shape it as desired and wrap in cellophane paper or margarine.
