Plantain rellenitos are an exquisite Guatemalan dessert made from ripe Mexican plantains (larger than the usual) with low sugar content. In fact, the filling has variations; it can be made with beans or sweet spread (manjar).
They are a traditional dessert from Guatemalan cuisine, of pre-Hispanic origin.

Plantain Rellenitos
Ingredients

6 Ripe plantains
½ cup of Flour
1 ½ cup of Water
½ cup of Sugar
1 Cinnamon stick
½ cup of Bread crumbs
1 cup of Black beans
½ teaspoon of Cinnamon
60 grams of Chopped chocolate
Enough oil for frying
Preparation (simple version)
Preparation
Step 1 : First, cut the plantains into pieces and cook in water with a cinnamon stick and sugar. Then remove the shell, mash them, and add the bread crumbs.
Step 2 : Fry the previously cooked and thickly pureed beans with sugar, ground cinnamon, and chocolate.
Step 3 : Shape the plantain into a small pancake, fill with a spoonful of beans, and close to form a rellenito.
Step 4 : Roll in flour and fry in hot oil. Sprinkle with sugar.
Step 5 : If desired, you can substitute the beans with sweet spread (manjar).
