Sweet Plantain Mole
Ingredients

12 Plantains not too ripe
120 grams of Pepitoria
120 grams of Sesame seeds
1 Dried chili peppers
1 Guaje chili
8 Large tomatoes
1 Cinnamon stick
1 ½ pound of Chocolate
1 ½ pound of Sugar approximately
1 liter of Oil
2 Champurradas (cookie biscuits)

Preparation
Step 1 : It is recommended to start by slicing the plantains lengthwise and then frying them in enough oil until golden.
Step 2 : Then, set them aside in a separate container.
Step 3 : In a large skillet, toast the pepitoria and sesame seeds, then blend this mixture and set aside.
Step 4 : In the same skillet, toast the dried chili peppers, guaje chili, tomatoes, champurradas, and cinnamon.
Step 5 : Once golden, blend all the ingredients and then strain the mixture.
Step 6 : In a pot, fry the previous paste and add sugar, chocolate, and water as needed to create a thick sauce.
Step 7 : Next, add this sauce to the fried plantains and cook for a few more minutes.
Step 8 : Finally, decorate with toasted sesame seeds and serve this dish full of characteristic flavors and aromas.
