Black Bean Soup
Ingredients
1 pound of Cooked black beans
1 tablespoon of Olive oil
1 Chopped onion
2 Chopped garlic cloves
2 Chopped tomatoes
1 Chopped red bell pepper
3 teaspoons of Ground cumin
2 teaspoons of Paprika
2 teaspoons of Salt
1 teaspoon of Black pepper
4 cups of Chicken broth
2 tablespoons of Sour cream
Juice of one lemon
Sliced green onions
Chopped cilantro
1 Chopped tomato
12 Tortilla chips
Preparation
Step 1 : In a medium saucepan over medium heat, add olive oil and sauté the onion.
Step 2 : Then add the garlic, tomatoes, bell pepper, cumin, paprika, salt, and pepper.
Step 3 : Cook for an additional 5 minutes and add the broth and beans.
Step 4 : Cook the preparation over low heat for 15 minutes.
Step 5 : Meanwhile, prepare the garnish.
Step 6 : Once ready, process the soup until smooth.
Step 7 : Reheat the soup and add sour cream and lemon juice.
Step 8 : Finally, serve accompanied by tortillas and the previously prepared garnish.
