Cak'ik is one of Guatemala's most traditional soups, perfect to enjoy in the company of family. It has been declared an Intangible Cultural Heritage.

Ingredients
2 pounds of Poultry cut into large pieces
½ pound of Tomato
120 grams of Miltomate (tomato-like fruit)
2 Large guaque chiles
1 Large dried chile pass
1 Large red bell pepper chile
6 Large garlic cloves
1 Medium onion
4 Cilantro branches
10 Mint sprigs
15 milliliters of Sesame seeds
4 Gordo peppercorns or chapa peppercorns
5 Peppercorns
30 grams of Pepitoria (ground toasted seeds or grains)
Onion stalks
Achiote
1 pinch of Salt
Cobanero chile
Preparation
Step 1 : To prepare this recipe, first cook the poultry with a bit of salt and a bundle made with onion stalks, mint, and cilantro stems in enough water, making sure the water covers the meat.
Step 2 : Next, prepare the recado: toast the pepitoria, sesame seeds, and peppercorns, and roast the bell pepper chile, chiles, garlic, onion, tomato, and miltomate.
Step 3 : Then, blend the recado dry and strain it.
Step 4 : Once the poultry is cooked with the bundle, remove it and add the recado, boiling for 10 minutes and seasoning with a little salt, achiote, and cobanero chile to taste.
Step 5 : Be careful that the poultry does not overcook.
Step 6 : Finally, serve the poultry in large pieces with a side of rice, tortillas, or small tamales according to preference.
