Ingredients
1 pound of Beef short ribs
1 pound of Potato
1 Carrot
1 Chayote
2 Onions
¼ Cabbage
3 Tomatoes
1 Cilantro stem
Salt
Achiote

Preparation
Step 1 : In a clay pot, place two liters of water and bring it to a wood fire.
Step 2 : Add the beef short ribs and let them cook for an hour.
Step 3 : Then add the vegetables in irregular cuts and let them cook.
Step 4 : Grind the following ingredients in a grinding stone: tomato, achiote, cumin, and onion.
Step 5 : Add these ingredients to the Caldillo to give it a soft reddish hue.
Step 6 : Add the cilantro and season with salt.
Step 7 : Let it cook for a few minutes and adjust the seasoning.
Step 8 : Serve in clay bowls and, preferably, accompany with white tamales and the drink of choice.
