Chicken broth
Ingredients
1 Whole chicken
3 liters of Water
1 pound of Potatoes
2 Small tender squash
3 Large tomatoes
1 Medium onion
6 Large garlic cloves
1 Bunch of onion stems
12 Sprigs of mint
1 pinch of Salt
Preparation
Step 1 : In a large pot, boil a bunch of tied onion stems, a whole onion, peeled garlic cloves, and tomatoes halved in 3 liters of water.
Step 2 : Once it boils, add the whole and clean chicken, cook with enough salt for three and a half hours.
Step 3 : Check the chicken meat from time to time to make sure it is well cooked.
Step 4 : Add the potatoes and squash in pieces to the broth 30 minutes before the cooking ends.
Step 5 : Add the mint at the end.
Step 6 : Cut the chicken into large pieces and roast it over coals, on a grill, or sauté in oil.
Step 7 : Place a piece on each plate when serving.
Step 8 : Serve the broth with garnishes such as avocado, spicy chili, bitter orange, and rice.
