Chickpea Soup
Ingredients
1 pound of Chickpeas
1 Smoked chorizo
½ Onion
1 A bunch of cilantro
1 teaspoon of Baking soda
½ tablespoon of Sugar and a cinnamon stick
1 pinch of Salt
1 pinch of Black pepper
Preparation
Step 1 : The chickpeas are left overnight in a pot with plenty of water and a teaspoon of baking soda; the next day, they are washed thoroughly.
Step 2 : They are boiled with fresh water, covered with a pressure cooker, for 50 minutes; then cooled without opening the lid.
Step 3 : The lid is removed, and they are cooked for about two more hours until tender, then the chickpeas are peeled carefully without breaking them.
Step 4 : They are returned to the heat with boiling water, adding the half onion, salt, chopped chorizo, and a cinnamon stick.
Step 5 : Finally, sugar, pepper, and cilantro are added.
Step 6 : Optionally, let it rest for another hour before serving.
