Ingredients

900 grams of Pumpkin

2 cups of Vegetable broth

225 grams of Tomatoes

½ cup of Water

1 tablespoon of Cornstarch

2 cups of Vegetables

1 teaspoon of Red pepper

1 cup of Cream or coconut cream

Preparation

Step 1 : Wash the tomatoes, cut them into wedges

Step 2 : Wash, peel the pumpkin, cut it into cubes

Step 3 : Blend the tomatoes and pumpkin in the three cups of water, pour this preparation into a pot, add the vegetable broth and mix

Step 4 : Let it cook over medium heat for 40 minutes, stirring occasionally with a wooden spoon

Step 5 : In a bowl, place the cream (of milk or coconut), cornstarch, mix

Step 6 : Add the preparation into the pot, stir continuously for 5 minutes

Step 7 : Serve hot and top with grated parmesan cheese
