Goat Cheese Soup
Ingredients
250 grams of Goat cheese
1 liter of Chicken or vegetable broth
1 cup of Chive sprigs
1 Yellow apple diced
½ Lemon
¾ cup of Shelled pistachios
10 Olives
8 Slices of toasted bread
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : First, melt the goat cheese in a saucepan with a cup of chicken broth.
Step 2 : Once melted, add the rest of the broth, mix well, put it in the refrigerator to set and cool.
Step 3 : Next, take the apple dice and add the lemon juice to prevent oxidation. Clean the pistachios, pit the olives, clean and cut, also place the chive sprigs in the previous broth.
Step 4 : Remove the soup from the refrigerator, divide it into bowls and accompany it with the chopped ingredients.
Step 5 : Serve the soup with slices of toasted bread.
